Chilli Con carne

1kg minced beef

2 x 400g can kidney beans

4 x 400g can tomatoes

Chilli powder

Beef stock cube x 2

2 large  onion, chopped

Mushrooms, chopped, (optional)

Tomato puree (optional)

Cornflour, mixed with a little cold water to make a paste


Brown mince in large pan.

Add onion and mushrooms if using.

Add chilli powder( as required to taste) and stock cubes and cook for a few minutes then add tinned tomatoes and kidney beans.

Bring to the boil  then reduce heat and simmer for 30-40 minutes until mince is tender.

Add a tablespoon of tomato puree if using and thicken using cornflour if required. 

Serving Options:

· tortilla chips in a large rectangular serving dish, grated cheese and Chilli on top 

· jacket potatoes and cheese

· boiled rice (allow ~90g per portion)

· chunks of crusty bread

· salad

All options can be served with sour cream, jalapenos and salsa or keep it simple!

Vegetarian option

Use quorn mince instead of beef mince
