Toad in the hole

You will need:

12inch rectangular casserole dish x 2

Serves 12 (16 if you do other veggies/chips with it)


Ingredients:

Batter:

16oz plain flour

4 large eggs

2 pints  liquid (1300ml milk, 700ml water)

Pinch of salt

16 sausages (cooked in advance, cut into 6 pieces each)


Instructions:

Pour 1 tbsp little oil into the bottom of the dish, rub it around with some kitchen roll and put in the oven at 190 degrees for 10 minutes, while you make the batter

(To make the batter):

Mix the flour, salt and eggs in a bowl, until they begin to form a paste

Stir in the milk, ¼ at a time, and continually stir (you can use a wooden spoon or a hand-held electric mixer for this)

Put your choice of filling in the bottom of the dish, then pour the batter mixture on top

Cook for 35-40 minutes at 190 degrees; check that the batter is cooked through by inserting a knife/needle and making sure it comes out clean

Serve with gravy or table sauces, and any vegetable or chips goes great


For an extra bit of flavour:

Cut your favourite cheeses into small cubes (mature cheddar and stilton are great with it). Once you’ve put the filling and batter into the dish, sprinkle the cubes of cheese in before putting it into the oven.
